Caribbean Pepper & honey Roasted Summer Squash

This mouthwatering vegan recipe is a delicious yet nutritious and healthy meal. This roasted squash dish is a nice balance between heat and sweet and will be all the rave at your next summer event!

Ingredients:

2 Whole Summer Squash
¼ Cup Olive Oil
3 Cloves Fresh Garlic (finely chopped)
1 teaspoon Fresh Scotch Bonnet Pepper (finely chopped)
3 tablespoons Honey
Salt to taste
1 teaspoon Red pepper flakes for garnish (Optional)

Directions:

  1. Preheat oven to 450 degrees F (230 degrees C).
  2. Trim the ends of squash, and cut crosswise to make ½ inch circular pieces. In a large bowl, toss the squash with olive oil, garlic, chopped Scotch Bonnet pepper, honey, and salt.
  3. Place ingredients in a shallow baking dish lined with aluminum foil
  4. Roast the squash until it becomes fragrant and begins to brown, 5-10 minutes. Check squash after five minutes and stir occasionally to avoid burning.
  5. Remove baking dish from oven and sprinkle with red pepper flakes for garnish (Optional).
